
Moist and fluffy cornbread with a touch of sweetness
Preheat oven to 400°F (200°C). Grease a 9x9 inch baking pan.
In a large bowl, whisk together cornmeal, flour, baking powder, and salt.
In another bowl, whisk together buttermilk, eggs, honey, and melted butter.
Pour wet ingredients into dry ingredients and stir until just combined. Don't overmix!
Pour batter into prepared pan and bake for 20-25 minutes until golden and a toothpick comes out clean.
While cornbread bakes, make honey butter by mixing softened butter with honey until smooth.
Serve warm cornbread with honey butter spread on top.
For extra moist cornbread, don't overbake! The center should be just set. Cornbread continues cooking slightly after removing from oven.
