
Delicate butter cookies infused with Maine honey and dried lavender
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
Grind lavender in a spice grinder or mortar and pestle until finely ground.
In a large bowl, cream together butter and honey until light and fluffy.
Beat in egg and vanilla extract until well combined.
In a separate bowl, whisk together flour, ground lavender, baking powder, and salt.
Gradually mix dry ingredients into wet ingredients until just combined.
Drop rounded tablespoons of dough onto prepared baking sheets, spacing 2 inches apart.
Bake for 10-12 minutes until edges are lightly golden. Cool on wire racks.
Use culinary-grade lavender only! Regular lavender may have been treated with chemicals. A little goes a long way - too much lavender can taste soapy.
